Ingredients:
2 Eggs
1/3 cup Honey
1/2 cup Coconut oil
1/2 cup Milk (non-fat)
1 cup Quinoa flour
3/4 cup Rolled oats
1 tbsp Oat Bran
1 tsp baking powder
1 tbsp Raw Cacao powder
10 Walnuts halves Crushed (not too tiny)
1 tsp Vanilla extract
1 pinch salt
1 tbsp grated coconut
Instructions
Preheat oven to 200 degrees C.
Grease with a bit of coconut oil 12 muffin cups.
Whisk eggs, honey, coconut oil, and milk together in a bowl until smooth. Add vanilla extract in the mixture.
Mix quinoa flour, rolled oats, oat bran, baking powder, chocolate powder and salt. Stir them into wet ingredients to form a batter. Add the walnuts carefully, and leave the mixture for a couple minutes, to soften the rolled oats.
Fill the prepared 12 muffin cups with batter. Sprinkle each muffin with a bit of grated coconut.
Bake in preheated oven for about 20 minutes, until tops have risen and are crispy, and an inserted toothpick comes out clean. Enjoy!!
