Want to take your salmon cooking to the next level? Try this amazing recipe from Cooking With Chia by Nicky Arthur. I added yummy mashed cauliflower with garlic which is a smooth as mashed potatoes. Smelly cauliflower can be counted as a superfood . Its sulfur compound has been shown to kill cancer stem cells, thereby slowing tumor growth. It also improves blood pressure and kidney function. Cauliflower also contains a wealth of anti-inflammatory nutrients to help keep inflammation in check.

Ingredients
Topping
- 1 tbsp chia seeds
- 1 tsp mustard seeds
- 2 tbsp chopped fresh parsley
- 1 garlic clove
- Zest of 1 lemon
- 3 tbsp lemon juice
- 1 spring onion/scallion, sliced
- 1 tbsp olive oil
- ½ cup quinoa flakes
- Sea salt and cracked pepper to taste
- ½ cup mixed seeds
Dish
- 4 salmon fillets
- cauliflower
- 2 crushed garlic
- 2 tbsp greek yoghurt
- Ground pepper
Instructions
Preheat oven to 180°C. Line a baking tray with baking paper.
Blend all topping ingredients until chunky (don't puree). Spread mixture over the salmon and bake for 15 to 20 minutes until the topping is golden and crusty. (if you have leftovers of the topping (like I did) store it for chicken or another salmon.)
Steam the cauliflower until soft. Puree cauliflower with a hand mixer add greek yoghurt and season with crushed garlic and ground pepper. Serve with salmon. Enjoy!!
